What are cookies?
Cookies are small text files that the sites you visit send to your terminal (usually the browser), where they are stored before being re-transmitted to the same sites on your next visit. When browsing a site, you can also receive cookies from different sites or web servers on your terminal (so-called "third-party" cookies); this happens because on the visited website there may be elements such as, for example, images, maps, sounds, specific links to web pages of other domains that reside on servers other than the one on which the requested page is located. What are they for?
Cookies are used to perform computer authentication, session monitoring and storage of specific information regarding users accessing the server and are usually present in the browser of each user in very large numbers. They can remain on the user's terminal for long periods or for short periods. Session cookies normally die at the end of the browsing session, when the browser is closed.
Cookies, however, can also be used to track user browsing on the web and create profiles according to their tastes, habits, choices, etc. With these cookies, advertising messages in line with the preferences already expressed by the same user in the online navigation can be transmitted to the user's terminal.

1. Technical cookies
Technical cookies are those used for the sole purpose of transmitting a communication over an electronic communications network, or to the extent strictly necessary for the provider of an information company service explicitly requested by the subscriber or user to provide such service. They are not used for other purposes and are normally installed directly by the owner or manager/operator of the website. They can be divided into:
- navigation or session cookies, which guarantee the normal navigation and use of the website (allowing, for example, to make a purchase or log in to access restricted areas);
- analytic cookies, similar to technical cookies when used directly by the site manager/operator to collect information, in aggregate form, on the number of users and how they visit the site;
- functional cookies, which allow the user to navigate according to a series of selected criteria (for example, language, products selected for purchase) in order to improve the service provided.

2. Profiling cookies
Profiling cookies are designed to create profiles related to the user and are used in order to send advertising messages in line with the preferences expressed by the same when web-browsing. Because of the particular invasiveness that such devices can have in the private sphere of users, European and Italian legislation requires the user to be adequately informed about their use and express its valid consent.
Our legislation requires that the storage of information in the terminal device of a contractor or a user or access to information already stored is only permitted on condition that the contractor or user has given his consent after being informed.

3. Analysis services cookies
Cookies are used to statistically analyze accesses / visits to the site (so-called "analytic" cookies) but they do not always exclusively pursue statistical purposes or collect information in aggregate form, and are often provided by third parties that collect users' IP addresses and they can be accessed in a disaggregated form (in these cases it is possible to limit the treatment using anonymization techniques). To measure the performance of the site (more / less views, more or less clicked items, number of visitors, most searched words, etc.), Google Analytics is used.
Google Analytics is a Google analysis tool that helps website and app owners understand how visitors interact with their content. You can use a set of cookies to collect information and generate usage statistics of the website. These markers are used to store visitor information, such as the time in which the site was visited, the previous visit, and through which domain they were sent to the site. This information, generated through mere access to the site, is then sent to server machines located in the United States of America and stored there by Google.
Besides cookies, a pixel tag is also used. Pixel tag is a type of technology used in websites or e-mails for the purpose of tracking the activities on websites or opening / accessing e-mails and is often used together with cookies (http://www.google.it/intl/it/policies/privacy/key-terms/).
The Google Privacy Policy (http://www.google.com/intl/it/policies/privacy/) instead, regulates in general the processing of personal data of users who use Google products and services. Lastly, to protect the user's rights, he/she is informed about the possibility offered by Google (through the add-on at the following link https://tools.google.com/dlpage/gaoptout?hl=it) to choose to be excluded from the collection of data by Google Analytics. In this case, visitors will not send any information to Google Analytics.

The legal basis of the processing of personal data related to technical cookies is the legitimate interest of the owner to the proper functioning of the site and the prevention of fraudulent behavior.

How to set Safari to block cookies in iOS 11
To choose Safari to block cookies, tap Settings > Safari > Block all cookies.
In iOS 8, touch Settings > Safari > Block cookies and choose "Always allow", "Allow only from websites I visit", "Allow only from current website" or "Always block". In iOS 7 or older versions choose "Never", "Third party and advertisers" or "Always".

Deactivation via browser settings
To proceed with the deactivation of cookies and/or choose the desired block level, desktop users can change their browser’s settings. Below are links to the main browsers currently on the market for changing session settings:

3.Click on Advanced at the bottom.

How to change cookie settings
To check or change your settings:
1.Click the menu button and select Preferences ("Options" for Windows users).
2.Select the Privacy panel.
3.Under History settings: select Use custom settings. "Block third-party cookies and site data".
4.To activate cookies, check Accept cookies from sites; to deactivate them, uncheck the item. You can exclude third-party cookies through "Accept third-party cookies" by setting it to Never. Click on the menu button and select Preferences.
Select the Privacy and Security panel and go to the History section.

1. In Internet Explorer, select the "Tools" button and then "Internet Options".
Select the "Privacy" tab, under "Settings" select "Advanced" and choose if you want to allow, block or receive a request for proprietary or third-party cookies.

Finally, it should be noted that it is possible to set the browsers so that they avoid storing cookies only temporarily: this option is called "incognito" navigation, "private browsing" or "anonymous browsing" (depending on the browser used).
